TURKEY & VEGGIE EGG CASSEROLE

Recipe makes 6-8 servings 

 

Ingredients:

1 tbsp Olive Oil

1 lbs ground turkey

1/2 onion

1/2 bell peppers

8 oz baby Bella mushrooms

1/2 cup frozen spinach 

4 eggs 

4 egg whites

5 oz Greek yogurt 

1 tsp cumin

1/2 tsp paprika

Salt and Pepper to taste

1/4 cup Shredded Sharp White Cheddar 

Coconut Oil Spray

 

Directions:

Preheat oven to 350 degrees. Spray casserole dish with coconut oil spray. In a pan over medium add olive oil, turkey, and spices. Cook until browned. While turkey cooks, chop all veggies and add to casserole dish. Add turkey when cooked through and frozen spinach. In a small bowl, whisk eggs, egg whites and Greek Yogurt until combined. Pour egg mixture into casserole and distribute evenly with a spatula. Top with shredded cheese and salt and pepper to taste. Cook for 45 mins to an hour. Serve warm topped with sliced avocado and enjoy!
