PUMPKIN TURKEY CHILI

Ingredients:​

- 4 tbsp olive oil (divided)

- 1 chopped yellow onion

- 1bs lean Ground Turkey

- 1 whole yellow pepper chopped

- 1 cup canned pumpkin purée 

- 2 cups sliced mushrooms

- 1 1/2 6 o.z . cans of green chiles

- 5 cloves of garlic

- 1/2 cup uncooked quinoa 

- 14.5 o.z. can diced tomatoes 

- 2 tbsp chili powder

- 2 tsp cayenne 

- 2 tsp coriander 

- 3/4 tbsp cumin

- pinch of salt

- Pinch of cinnamon 

Toppings: 

- 1-2 tbsp Greek yogurt

- 1/4 avocado sliced 

- Chopped cilantro

Directions:

Heat 2 tbsp oil in pan. Add garlic and cook till flagrant. Add ground turkey and brown. Add remaining oil to bottom of slow cooker. Place onions at bottom of the slow cooker and add all remaining ingredients. Cook on low for 6-8hrs. When ready to serve garnish with yogurt, avocado and cilantro.
