Pasta with Parmesan

CREAMY PUMPKIN CAULI GNOCCHI

Makes 2 servings

 

Ingredients:

Trader Joe’s Frozen Cauliflower Gnocchi

1 link of Chicken Sausage

 

Sauce:

1 cup pumpkin purée 

1/4 cup coconut milk

1 Tsp Sage

1 tsp cinnamon 

Pinch nutmeg 

dash of cayenne 

Salt and pepper to taste

 

Directions:

  1. Combine all ingredients in a sauce pan and heat through on medium heat until it begins to bubble. Turn down to a simmer and cook until Gnocchi is prepared. 

  2. Prepare TJs frozen gnocchi to package (preferable to stove top) directions. When about half way cooked, add sliced chicken sausage to skillet and sauté with pasta until both are cooked through. 

  3. Add sauce to gnocchi pan skillet and fold to combine. Top with Parmesan and fresh parsley,
