
CHOCOLATE BANANA CREAM PIE PARFAITS
Makes 2 servings
1 Banana, sliced
2 tbsp. Cacao Nibs, divided
1/4 cup Slivered Almonds, divided
2 tbsp. Sunflower Kernels, divided
Chocolate Layer:
1 5.3oz container of Greek Yogurt, used Trader Joes
1 tbsp. Cacao Powder
1 tsp.Vanilla Extract
1 tsp. Maple Syrup, optional
Vanilla Layer:
1 5.3oz container of Greek Yogurt, used Trader Joes
1 tsp. Vanilla Extract
Dash of Cinnamon
1 tsp. Maple Syrup, optional
In a small bowl combine the ingredients for the Chocolate layer, using a small spatula to gently fold until fully combined. Divide the Chocolate layer evenly between two mason jars (I used 6oz. jars but you can use any size). Top with Cacao nibs, slivered almonds, sunflower kernels and 1/2 sliced banana per jar. In another small bowl, mix the Vanilla layer together. Divide the Vanilla layer evenly and add it to the top of the jars. Close the jars with lid and pat until the vanilla layer starts to seep down into the banana layer. Store in fridge util ready to serve and enjoy!
