APPLE UPSIDE DOWN MUFFINS

Ingredients:

Muffins:

1 Apple (I used green apples) peeled and sliced thin

3/4 oat flour

3/4 Cinnamon Bun Protein

1 tsp. Baking powder

1 tsp. cinnamon

1/4 cup maple syrup 

2 eggs

3 tbsp coconut oil

1/3 cup Apple cider 

Coconut oil spray 

Icing:

2 tbsp. Vanilla non-dairy yogurt (use Kite Hill Almond Yogurt)

2 tbsp. Coconut oil melted

2 tbsp. Maple Syrup 

Dash or two of cinnamon 

 

Directions:

Preheat oven to 350. Add all dry ingredients to a medium bowl. Whisk to combine. Add all wet ingredients to bowl, except for apples. Stir or blend to combine. Spray muffin tins with coconut oil spray. Add 2-3 slices of Apple to bottom of tin and add batter on top. Bake for 20-25 minutes. Let cool and top with icing.
