ALMOND BUTTER COOKIES & GREENS
2 handfuls of spinach
1/2 cup frozen cauliflower rice
1/2 frozen banana
1 tbsp organic almond butter (divided)
1 tsp maca powder
1 scoop vanilla protein (use Tone It Up Organic)
1 tsp vanilla extract
1/2 cup unsweetened almond milk
1 tbsp chia seeds
1 tbsp melted almond butter (for drizzle)
Make sure you have all frozen ingredients prepped ahead of time. I like to chop and store them in portioned sized freezer bags for convenience. Then start by measuring, preparing and sort all the other ingredients you'll need.
1. Add spinach, cauliflower, banana, almond butter, maca, protein powder, vanilla extract and splash of the almond milk into a blender or food processor fitted with s blade. Pulse or blend ingredients on low until they begin to break up and combine.
2. Add remaining almond milk and blend on high until thick and smooth. You may need to stop an scrap the edges a few times.
3. Pour into bowl, top with goodies and enjoy!
